About Sturgeon

Sturgeon are members of an ancient group of large fish. Sturgeons are found only in the northern hemisphere. Sturgeon is without bones and the processed roe which is caviar, is highly valued. They are usually found in Caspian Sea. The coloring of this fish is special from olive-brown to grey on back and sides, with white belly and has a large, bony-plated body. The female necessitates more than twenty years maturing, and then it spawns only every four to six years during its fifty year lifespan. Sturgeon are also very slow growing, often taking more that 25 years to reach reproductive maturity. Types of sturgeon fish include Baltic, shovelnose, Atlantic, beluga, sevruga, white and green sturgeon, paddlefish, shovelfish and white shovelnose. They eat fresh and little fish but they also can grow by feeding themselves with marine plant and insects. They are slowly swimmers but they are easy to catch for their eggs and for oil which is very expensive. This fish can grow from three till five feet and with a weight of ten till eighty pounds.
